One of the things that put Punjabi cuisine on the map is literally where it is on the map.  As the gateway to India, it has been influenced by the cuisine of the Greeks, Turkish, Persian and in the case of this dish, China.  This is Indo-China dish has stir fry and sweet & sour influences.  It's quick and easy to make but you could never tell when eating it.  Served popularly as an appetizer, but also can work as a main too.

Plenty of protein from the Paneer and if you check out the variations section below you can see that there are many ways to make this dish.  This is the way we make it home, healthier, less frying, oil and no batter.

Prepare the Paneer

    Ingredient / Preparation

  • 250.00 Gram Paneer
  1. Paneer/Cottage cheese can be prepared in a number of ways. Deep fried is the popular way when cooked for parties or restaurants.

    The healthiest way to fry would be to just fry them in just a little oil.

    A halfway house for the frying way would be to coat in a cornflour, salt & pepper mix. You will need a little more oil since the cornflour will soak it up too.

    The healthiest way would be to just add to the stir fry as it is without any preparation.


Make the chilli sauce

    Ingredient / Preparation

  • 1.00 Tea spoon Soy sauce
  • 1.00 Table spoon Tomato sauce
  • 1.00 Table spoon Chilli sauce
  • 0.50 Tea spoon Ground turmeric root
  • 0.75 Tea spoon Punjabi Gharam masala
  • 0.50 Tea spoon Himalayan salt
  1. Simply mix all the ingredients together.


Stir fry

    Ingredient / Preparation

  • 2.00 Table spoon Cooking oil
  • 1.00 medium _ Onion
  • 1.00 _ Fresh Bell pepper
  • 15.00 Gram Fresh ginger
  • 3.00 Clove Fresh garlic
  1. Add the oil to a pan on a medium heat.
  2. When the oil is hot, add the ginger and garlic and cook for a couple of minutes.
  3. Stir fry the Pepper and Onion. Cook for a few minutes, keep the peppers a little crunchy.
  4. Add the Cheese/Paneer. Cook and regularly stir for approx 5 minutes.
