Our favorite Recipes are ones that allow for adaption and this one certainly delivers. Let your imagination go and adapt to any season with this versatile recipe.  I received this recipe from my latest Couchsurfer, Nadege, who is visiting from France - so I trusted her when she said this bread recipe was amazing. The original recipe had olives, which was delicious too, but since it was winter and we had some winter vegetables lying around we thought we'd experiment. Since then we have made it two more times already(!), and even trying sweet variations using Stevia (instead of sugar).

Heat the vegetables

    Ingredient / Preparation

  • 150.00 Gram Fresh Beetroot
  • 200.00 _ Fresh Butternut Squash
  • 200.00 _ Carrot
  1. Prepare the vegetables by pealing them and chopping them into pieces.
    Beetroots take longer to cook so cut them small (1/2 cm to 1cm), Carrots about 1cm thick, and the Squash takes the least time so can be bigger (2cm to 3cm).
  2. Place all the vegetables in a steamer or a pot with a lid and ½ inch water.
  3. Steam until the vegetables become tender.


Prepare the dough

  • 200.00 Gram Khorosan Flour
  • 2.00 Tea spoon Sodium bicarbonate
  • 3.00 Tea spoon Himalayan salt
  • 65.00 Gram Mixed nuts
  • 1.00 Tea spoon Punjabi Gharam masala
  • 1.00 _ Ground turmeric root
  • 1.00 _ Cumin seed
  • 3.00 Table spoon Olive oil
  • 2.00 Tea spoon Cider vinegar
  • 200.00 Ml Water
  1. Ready the oven, pre-heat to 180 degrees.
  2. Ready a bread or cake mould. Line with some oil.
  3. Crush the nuts in a mortar by tapping them with a pestle.
  4. Take a bowl and add the Flour, Sodium bicarbonate, Salt, Nuts, Masala, Turmeric and Cumin.
  5. Mix well.
  6. Make a well in the center of the mix. Add the Oil, Water and the Cider vinegar. Mix thoroughly until you reach a smooth thick creamy consistency
  7. Add the vegetables to the bowl and mix again.


Bake the bread

  1. Pour and scoop the mixture into the bread mould.
  2. Give it a nice smooth surface by gently stroking with the bottom of a large spoon.
  3. Place the mould on the middle tray of the oven.
  4. Cook for about an hour.
    You will know it is ready by inserting a knife into the bread. If it comes out dry then it is ready, otherwise return to the oven.
  5. Enjoy!

Shopping list




    Use Olives as per the original recipe - you'll need to remove the pits and about 200 grams worth

    Try a sweet version, I added coconut and almond milk powder, 3 tablespoons of honey and used different spices (Cinnamon, nutmeg and ginger). Add sugar to taste.

    Experiment with other flours, Buckwheat is our favourite. Or try blends of flour.
